Colleges and universities serve thousands of meals every day, making campus dining a powerful opportunity to reduce greenhouse gas emissions and model sustainable food systems for future generations. This three-hour virtual workshop brings together behavioral science and campus food systems expertise to explore how institutions can encourage plant-rich eating and reduce food waste—without limiting choice or provoking resistance.

Featuring Cass Sunstein, author of Nudge, alongside leaders from the Center for Food Systems Transformation at the University of San Diego, the workshop introduces practical, evidence-based strategies grounded in behavioral psychology. Participants will examine real-world campus case studies where plant-based defaults led to significant shifts in dining behavior and practice, applying these approaches to their own campus contexts.

Participants will also leave with a Plant-Based NGO Resource Guide, connecting them to nonprofit partners offering support with student engagement, chef training, menu design, procurement, and implementation.

During this webinar, we’ll explore “How Are We Doing? Assessing the Impact of Sustainability Across the Curriculum Programs on Teaching and Learning.” In many cases, sustainability across the curriculum initiatives at colleges and universities are “bottom up,” slowly building cadres of faculty across disciplines that redesign courses to incorporate education for sustainability into teaching and learning. The distributed structure of these initiatives can make it challenging to assess impacts on teaching and learning at the institutional level. In addition to discussing the research study, this session will invite participants to share and explore options to evaluate the impacts of education for sustainability initiatives, from ongoing, informal measures to major research studies. Participants will leave with a better understanding of how to evaluate, document, and disseminate the impacts of their programs.

Many colleges and universities are rethinking how their grounds are managed as part of broader sustainability and climate goals. This spring, AASHE’s six-week Organic Landscape Management course equips ground managers, sustainability leaders, facilities staff, faculty, and students with the tools to transition from conventional practices to organic, pesticide-free landcare. Participants gain practical tools to eliminate synthetic pesticides and fertilizers, improve soil health, and design resilient, climate-aligned campus landscapes. This six-week virtual course meets on Tuesdays, Mar. 3- Apr. 7 (2-4 p.m. ET). The deadline to register is Mar. 3, 2026.

Virtual workshops and online courses allow for deeper and more advanced explorations of key topics facing higher education sustainability leaders. Open-space forums provide opportunities for participants to shape the agenda and build relationships with like-minded colleagues.
