Local Food on Campus Survey

I work with the Office of Sustainability at Appalachian State University, and we are looking at putting together a survey to quantify the demand for local food on campus, and how much people would be willing to pay for it to be integrated into Food Services.
Does anyone have any experience, helpful advice/suggestion, or resources with this at your own school? Thanks for your help!
I would be proactive and move in that direction of buying locally grown, harvested and processed food and beverages and seek environmentally conscious student groups to support the move. It is the right thing to do. Once the program is underway and you broadcast what you are doing, the entire campus will jump onboard.

At Skidmore College, we have our own organic garden and buy a fair amount of produce from local farms. One senior is currently doing a capstone project on local food in our dining hall and created a survey about the value of local food.
